Curriculum Overview
The Cheese School of San Francisco is committed to building a complete curriculum. Classes are organized under the following categories:
Cheese 101 |
There are three classes in the Cheese 101 series: Basic Cheese Primer; Cheese Selection, Storage and Service;and Cheese and Wine Pairing . Each class in the series stands on its own and provides an important piece of the foundation for better understanding cheese and deepening its appreciation. Together, they provide a complete introduction to how cheese is made and its different classifications, how to properly select and care for cheese, and how best to create a complete cheese tasting experience. |

Core Tasting |
While there are many ways to classify and categorize cheese, different cheeses are, at their core, intimately tied to their places of origin. One of the best ways to survey all of the different types of cheeses and learn about their similarities and differences is by looking to the great cheese making countries and regions of the world as a guidepost. The classes in our Core Tasting series offer an opportunity to taste all the best in cheese – from fresh to aged, cow to sheep to goat, light and grassy to pungent and earthy – with regional offerings such as Cheeses of France, Cheeses of Italy, Cheeses of Spain, Cheeses of the Mediterranean and others. |
Exploring Further |
The enjoyment and appreciation of cheese can be boundless, so The Cheese School also offers a wide array of classes that will inspire and resonate with specific interests of all kinds. The classes and events in our Exploring Further series delve deeply into a particular cheese topic, cheese type, or cheese region. Classes in our Exploring Further series include offerings such as Farmstead Cheese, Locavore's Cheese & Wine, and Connoisseur's Cheese. |
Special Events |
From time to time, The Cheese School hosts Special Events that are linked to the seasons, offsite visits, or one-time opportunities to meet with and learn from distinguished luminaries in cheese and cheesemaking and related food specialties. Special Events might include classes like For the Love of Chocolate, Perfect Pairings for Port, Triple Crèmes and Champagnes, American Cheese and Wine, and St. Patrick's Day Special: Cheese and Beer. |
Drop-In Nights |
As an alternative to the more structured setting of scheduled classes, The Cheese School occasionally hosts Drop-In Nights. These evenings offer a chance to enjoy a sampling of various cheeses and their pairings at a reduced cost, with no formal presentation but with one of our expert hosts on hand to chat and answer questions. These evenings are especially fun, relaxed and social – a great way to unwind at the end of the workday or work week. No advance registration is necessary and participants can come late or leave early. |
